Hot Cowboy Dip

A hot dip brings people around the coffee table. Here is a hearty hot dip that is perfect served with tortilla chips. Add some sliced jalapenos to jack it up a bit if you like it spicy and enjoy.

  • 1 lb Ground beef
  • 2 tbsp Green chilies
  • 2 tbsp Green pepper
  • 1 tsp Jalapeno pepper
  • 4 tbsp Onion
  • 1/4 tsp Oregano, dried
  • 2 tsp Parsley, fresh
  • 1 can Nacho cheese soup, condensed
  • 4 tbsp Pimiento-stuffed olives
  • 4 tbsp Ripe olives
  • 1/2 cup Salsa
  • 1/4 tsp Pepper
  • 3 tbsp Red pepper, sweet
  • 1 Tortilla chips
  • 1/4 cup Cheddar cheese
  • 2 tbsp Sour cream


  • In a large skillet, cook the beef, 3 tablespoons onion, 2 tablespoons red pepper and 1 tablespoon green pepper over medium heat until meat is no longer pink; drain. Stir in the soup, salsa, 3 tablespoons ripe olives, 3 tablespoons pimiento-stuffed olives, chilies, jalapeno, oregano and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
  • Transfer to a serving dish. Top with the cheese, sour cream and parsley; sprinkle with the remaining onion, peppers and olives.
  • Serve with tortilla chips
