Chef Prudhomme’s Blackening Spice


I buy so much of this spice I decided to try to make my own.  This recipe tastes like the real thing.  It is great on fish and chicken.


  • 1 tablespoon sweet paprika
  • 2 1/2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cayenne pepper
  • 3/4 teaspoon white pepper
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano leaves


Mix all ingredients and store in air-tight container.
