Fajita Rub for Chicken

Chicken Fajitas are quick and easy to make, healthy, and the perfect light summer meal.  I make this fajita rub and store it so that I can just grab it and sprinkle it on chicken, pork or beef, fire up the grill, and have dinner on the table in no time.


  • 3 tbs paprika
  • 2 tbs chili powder
  • 1 tbs sugar
  • 1 tbs garlic powder
  • 3 tsp salt
  • 2 tsp onion powder
  • 2 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 tsp chipoltle pepper ground


Place all ingredients into small bowl and mix with whisk.

Coat chicken breasts and refrigerate for at least 30 minutes.  Grill for 6-8 minutes per side or until juices run clear.  Let chicken sit for 5 minutes and then slice in 1/4 inch thick slices.  Serve in flour tortillas with cooked peppers and onions, salsa, and fresh cilantro.
