Mandarin Salad

This is one of my favorite salads! My sister-in-law makes this salad and has brought it to family gatherings. She gave me this recipe and I had to share.

As with many of my favorite recipes, this salad has lots of textures – almonds, celery, green onions, iceberg lettuce, and mandarin oranges. The dressing is slightly sweet and the parsley gives it a really “fresh” flavor.




  • 1/2 C slivered almonds
  • 3 T sugar
  • 1/2 head iceberg lettuce
  • 1 C chopped celery
  • 2 whole green onions, chopped
  • 1 11-oz can mandarin oranges, drained


  • 1/2 t salt
  • Dash of pepper
  • 1/4 C vegetable oil
  • 1 T parsley, chopped
  • 2 T sugar
  • 2 T white wine vinegar
  • Dash tabasco sauce


  • Cook almonds and sugar over medium heat, stirring until almonds are cooked and sugar dissolved
  • Mix dressing and chill.
  • Mix celery, lettuce, and onions
  • Add almonds and oranges
  • Toss with dressing and serve
