You could probably tell that it is warm where I am and that it is Friday and I am looking forward to a tropical drink. This simple recipe for a Pina Colada Smoothie will fit the bill. To make this into an alcoholic treat, simply add one shot of rum to your blender.
The creme de coconut pictured below can be found in the grocery store as well as in a liquor store.
- 1 cup ice
- 1 cup fresh pineapple (you could use frozen)
- 1 cup yogurt
- 2 tablespoons creme de coconut
- Place all ingredients into a blender and puree on high for 30 to 60 seconds.
- Pour into a glass, garnish with a wedge of pineapple and serve immediately.
