Portuguese Cod Fish with French Fries and Scrambled Eggs

Salted cod with french fries and scrambled eggs


  • 1.5 lbs fresh cod
  • 10 medium potatoes
  • 2 medium yellow onions
  • 5 cloves garlic
  • 6 eggs
  • salt and pepper, to taste
  • extra virgin olive oil, to taste
  • corn oil, to deep fry the potatoes and sweat onions and garlic
  • fresh parsley, to garnish
  • black olives, to garnish

Green Salad

  • 1 iceberg lettuce head
  • 1 large red tomato
  • 1 cucumber
  • salt and pepper, to taste
  • lemon juice, to taste
  • white wine vinegar, to taste
  • extra virgin olive oil, to taste


  • Boil the cod for 15 minutes.
  • Rinse and shred it apart with your hands, making sure you remove any bones.
  • Peel potatoes and cut them into medium size sticks.
  • Fry the potatoes in corn oil and drain them with absorbent paper and set aside.
  • Crush and mince the garlic and cut the onions in thin fine rings.
  • In a pot, add corn oil and olive oil and sweat the onions and garlic until tender/golden.
  • Add the cod, potatoes and mix well for about 5 minutes.
  • Remove pot from heat.
  • Beat the eggs seasoning them with salt and pepper and add them to the pot.
  • Switch on the heat and stir it constantly with a spatula so that the eggs will thicken.
  • Tip – It should remain soft, so that the whole mixture does not dry out.
  • Sprinkle with chopped parsley and decorate with olives, serve immediately.Salada VerdeGreen Salad Directions
  • Wash all ingredients.
  • Dry lettuce and tear into bite size pieces.
  • Cut tomato into wedges.
  • Peel and de-seed cucumber and slice thin.
  • In a large bowl add lettuce, tomato and cucumber and refrigerate until ready to season.
  • To season add lemon juice, vinegar, olive oil, salt, pepper and toss lightly
