Red Cabbage Slaw

red cabbage slawI am always looking for new salad recipes.  I’ve planned a get-together and have asked each guest to bring a salad.  There will be seven to eight of us.  I am looking forward to seeing what people bring.  There are so many different types of salads – pasta salads, rice salads, green salad, broccoli salads, bean salads, etc….

This recipe for Red Cabbage Slaw offers a wonderful combination of flavors – granny smith, ginger, and wasabi. Red cabbage is bright and colorful and has a great flavor.  I love trying new recipes.  Red cabbage slaw won’t replace cole slaw, but it is a nice change of pace salad.




1 small head red cabbage, tough bottom ribs removed, shredded (about 6 cups)
3 Tbls. ginger, julienned
3 carrots, grated
2 Granny Smith apples, julienned
1 red onion, very thinly sliced
1/4 cup apple cider vinegar
Kosher salt
1 1/2 to 2 cups mayonnaise
1 tsp. wasabi


Combine the cabbage, ginger, carrots, apples and onion in a large bowl. Add the vinegar and season with salt and let sit at least 1 hour. This time will allow the cabbage to soften a bit and it will create a great texture.

Drain the cabbage leaving some liquid (about 1/2 cup). Stir in the mayonnaise and wasabi. Taste for seasoning and add salt if necessary.
