Rice and Nut Salad

 

Rice salads are a nice light side or entree in the summer.  They are healthy,easy to make and can be made ahead of time.  Fresh peaches are in season and certainly can be used in this recipe instead of canned peaches, but canned peaches work just fine.

The fruits and nuts offer great textural contrast and the beans provide protein.  All in all this is a very healthy, light summer meal.

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • salt and pepper
  • 3/4 cup golden raisins
  • 1/3 cup currants
  • 3/4 cup blanched almonds
  • 1/2 cup cashews
  • 1/2 cup walnuts
  • 1 1/4 cups brown rice, cooked
  • 15 oz. canned peach slices
  • 1/2 cup cooked kidney beans

Directions

Put olive oil, lemon juice, salt and pepper in screw-top jar and shake until thickened.  Soak and drain the dried fruits. Chop the nuts. Combine soaked fruits, nuts, rice, peaches, cucumbers and beans.  Pour dressing over and toss.  Serve on a bed of lettuce or spinach.
