I am not a fan of bottled salad dressing and I rarely buy it. The one exception is Catalina. That is one bottled salad dressing that I really do like.
Last night I came home after having been away for the weekend and had to make a meal from nothing. I had a few salad fixings and really had a desire for Catalina dressing. Luckily I had all the ingredients for this Catalina Salad Dressing in the house (except for the worcestershire sauce).
I drizzled this dressing over a chopped salad which contained a bit of this and a bit of that and it was delicious. ( I did not miss the worcestershire sauce though I will try to include it next time I make it to see if it makes a difference.)
- ¼ cup ketchup
- ¼ cup sugar
- ¼ cup red wine vinegar
- ¼ cup onion, chopped (or ½ teaspoon onion powder)
- ½ teaspoon paprika
- ¼ teaspoon worcestershire sauce
- ½ cup canola oil
- salt and pepper, to taste
Place first 6 ingredients in a food processor or blender (or use a handheld blender) and process until smooth. Add the oil in a steady stream with the machine running until the mixture comes together in an emulsion. Season with salt and pepper. Serve immediately. Store in the refrigerator for up to one week.
