Spice Cake with chocolate icing


I have been looking for a recipe for spice cake that resembles the spice cake I used to buy from a local bakery when I was a child.  I finally found it.  The zucchini makes this spice cake is moist, rich, and delicious. The dark chocolate icing is the perfect topping!


  • 2 cups sifted flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1/2 teaspoon netmeg
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 3 eggs
  • 2 cups shredded zucchini


  • Preheat oven to 350 degrees
  • In a large bowl, sift together flour, cinnamon, allspice, cloves, nutmeg, baking soda, baking powder, and salt.  Set aside
  • In another large bowl, beat sugar, brown sugar, oil, vanilla, and eggs on medium speed until well blended.  Reduce speed to low and add dry ingredients and zucchini.
  • When cool, ice with your favorite dark chocolate icing.
