Thai Salad with Peanut Dressing

This is a delicious salad because of the combination of ingredients.  As with all recipes, you can alter the ingredients to your taste.  I made this recipe for dinner last night and was absolutely wowed by it.  It is definitely a keeper!!

This dressing is delicious and would be great served with fish, on a sandwich, or even over pasta.  This is a must-try recipe!

Ingredients

  • 1/2 Nappa Cabbage – shredded
  • 1/2 Iceberg Lettuce – cut into bite sized pieces
  • 2 Stalks of Celery – sliced very thin (I used food processor)
  • 1 carrot – shredded (I used food processor)
  • 1 carrot – sliced very thin (I used food processor)
  • 3 healthy tablespoons of fresh cilantro – chopped
  • 1 inch of fresh ginger – shredded (I used food processor)
  • 2 scallions chopped
  • 1 small red pepper – sliced thin
  • 1/2 cup fresh bean sprouts
  • 1 small can sliced water chestnuts
  • 1/2 cup dried, sweetened cranberries
  • 1/2 cup toasted almond pieces
  • 1/2 cup La Choy Chow Mein Noodles

Dressing

  • 1/3 c. peanut butter
  • 1/3 c. soy sauce
  • 1/3 c. rice vinegar
  • 1/3 c. sugar
  • 1 T. sesame oil
  • 2 T. ginger (fresh)
  • 2 T. lime juice
  • Dash of cayenne pepper (or more if you like it more spicy)
