Tortellini Soup

Ingredients

  • 2 cloves garlic
  • 1 tablespoon butter
  • 2 (14 oz) cans of chicken broth
  • 8 oz. Cheese tortellini
  • 1 (15 oz.) can chopped spinach, undrained
  • 1 (14 oz.) can stewed tomatoes, undrained & cut up
  • Grated Parmesan cheese

Directions

  • In large saucepan, over medium-high heat:
  • cook garlic in butter for 2-3 minutes.
  • Add broth and tortellini.
  • Heat to a boil, reduce heat, simmer 10 minutes.
  • Add spinach and tomatoes, simmer 5 minutes more.
