Zucchini and Carrot Fritters

This recipe for Zucchini & Carrot Fritters is just my way of attempting to get something nutritious into my kids…oh and they are really tasty too.  The texture of these fritters was wonderful, a bit like a potato pancake or the corn cakes I’ve often gotten in Thai restaurants. I think the onion is an important flavor in these zucchini & carrot fritters.  Without the onion I think they might have been a bit bland. Fritters are a tasty side dish served alongside some kind of protein – chicken, fish, pork, sausage, or beef.  Made bite size, they are great as an appetizer served with a bit of sour cream.

Ingredients

  • 1 c. grated carrots
  • 1/2 c. grated zucchini squash
  • 2 c. green onions, chopped
  • 1/2 c. flour
  • 1/2 tsp. baking powder
  • 1 egg
  • 1/4 c. milk
  • 2 tbsp. oil

Directions

  • Right Mix all ingredients.
  • Drop by tablespoons into hot oiled skillet.
  • Cook until golden brown.
