Zucchini Cookies


The first time I had zucchini cookies I was shocked when I was told they were made with zucchini.  I  loved them and thought they were the most delicious oat meal cookies ever.  The zucchini adds a really nice flavor and moistness and is one way to get something wholesome into the kids.


  • 3/4 c. butter
  • 1 c. sugar
  • 1 egg
  • 1 c. grated zucchini
  • 1 1/2 c. flour
  • 2 c. rolled oats
  • 1/2 t. baking soda
  • 1/2 c. nuts
  • 1 c. raisins
  • 2 t. cinnamon
  • 1/4 t. nutmeg


  • Preheat oven to 400 degrees
  • Mix flour, oats, baking soda, cinnamon and nutmeg in bowl. Set aside.
  • Beat butter and sugar until light and fluffy. Add egg.
  • Mix in dry ingredients.
  • Add raisins, nuts and zucchini and combine well.
  • Using a small ice cream scoop or a spoon, place dough in small mounds on baking sheet lined with parchment. Bake until done, about 15 minutes.
